Supervising Food Safety in Catering CIEH Level 3 Award

This course will equip you with the knowledge and skills needed to meet food hygiene requirements. The course will enable you to gain a detailed knowledge and understanding of food production, processing, storage, transportation, wholesaling, catering and retailing. You will learn to carry our food hygiene responsibilities effectively, and will gain a recognised qualification from the Chartered Institute of Environmental Health (CIEH).

Entry requirements

This course is suitable for managers and supervisors in the food and drink industry. It would be beneficial if you have completed the Food Hygiene Award Level 2.

Course content

During the course you will cover topics including:

  • Bacteriology
  • Food poisoning and foodborne disease
  • Physical contamination of food and its prevention
  • Food storage and temperature control
  • Food preservation
  • Design and construction of food premises and equipment
  • Cleaning and disinfection
  • Pest control
  • Personal hygiene
  • Legislation
  • Supervisory management

Assessment methods

An examination will be given at the end of the course, on a date set by the Chartered Institute of Environmental Health (CIEH). The paper is marked externally.

Further study and career options

You will have a sufficient level of food hygiene knowledge to work in a food preparation environment in a supervisory role.
